    I was mostly concerned about smoke coverage and the parts laying on the grill not being cooked all the way through even though it is a very small area.

    MES 30 Smoking Heavy Residue

    All,  I am sure there is an easy answer for this. My MES 30 that I used only 3 times now wants to smoke without chips in it. I believe it is from the grease drippings but very hard to clean that out. Is there an easy answer for this? I hate my meat to smell like burned grease....

    Sausage Smoker Opinion

    I Have the MES 30 and it is a bit too small for the 20" casings of summer sausage I want to do. Plus, My MES 30 has a hard time keeping an constant temperature.....The temps are all over the place inside and from top to bottom is a huge temp difference. I wonder if all smokers have this issue.

    Sausage Smoker Opinion

    I am looking strictly for a sausage smoker that is vertical and can maintain a good inside temp. I found the SausageMaker 30 LB. Country Style Insulated Smokehouse that might do the trick. Anyone have experience with this and any alternatives....Here is a link to their website...

    How do you get the MES to maintain a constant temperature when the heating element goes on and off all the time? My thermometers are RediCheck dual probe. So the thermometers are not an issue.

    I was putting a handfull of chips every 40 minutes or so. It seem to really smoke a lot. It did taste wonderfull but I think maybe a tad too much smoke taste....
