Same Here Jordan, this place SMF is awesome and also Youtube, I would recommend Malcom Reed's How to BBQ Right ( https://www.youtube.com/user/howtobbqright ). if you haven't read it already Jeff's e-course is Great, I suggest reading it all do skip what you think you know.
There are benefits to both, the main reason to us paper it will help trap the heat but not the steam. Steam will soften the bark, paper will allow steam to release and preserve heat where as aluminum foil will trap the steam. Just depends on what you are going for.
