    Seems to be a few 1st butts going down this weekend, so I thought I would add my thread also. Got mine in the fridge all rubbed up right now. I am going to try and get up around 3am to get it started. I will post the Qview as I get the pictures on the computer. Wish me luck.....

    Believe me, we have plenty of chicken for awhile. The wife got a good deal on legs, thighs, and breasts. Plus we already had chicken in the freezer... We could never have enough pork!

    I had the wife take them back last night. They did look meaty, but I really wanted to get a butt for this weekend. I figure the 12 bucks would get me more meat if I put it towards a butt. Maybe I should have kept one pack to try, but it is too late now. Thanks for the input.

    Grrrr! Previously frozen brisket

    I think that the brisket definitely needed more time. I know that it is important to cook to temp and not time, but generally you can count on 1.5 hours per pound give or take. With almost 6 pounds of brisket cooking for only 6 hours and then removing at 160 (around plateau temp)... Definitely...

    Adding Charcoal

    You can also make a charcoal basket, if you don't have one already. Put unlit coals on the bottom, and dump lit on the top (Minion Method). Will give a longer more consistent burn. I was doing the unlit on top of the lit at first, and this worked fine, but I was going through more charcoal...
