    Double low salt Pork butts

Low salt Pork butts I made 2 - 9 lbs. pork butts on Sunday. I made them like I would have done a beef brisket. I started by trimming fat down to less than 1/4 thick. I injected the butts and place in a big ziplock bag. Then poured left over injection as a marinade and let them sit in cold...

    Smoking snob

Think I have become a snob. The wife and I went to a County fair Saturday night. Mama wanted to get BBQ pork and Brisket. I was thinking "Really, after what we have been smoking". But I did not say a word. We shared the food. After the wife had a bite of both she said "This isn't even close to...

    MES 30 Conversion

Jonok, Thanks for the explanation. reminds me of Chem101 and Biochem, way to many years ago. I just never thought of a anaerobic process, just always put wood in the aerobic mind thought. I did get kicked out of high school chem class playing with the aerobic process. (Oxygen + Heat + fuel =...

MES 30 with AMNPS vs Pellet Grill

All is well. I agree the brush does not make the artist. Some of us here are true artist of the smoke (not me). Others of us are lovers or admirers of the art and just want to create something that comes close for our own enjoyment. That is the beauty of this site. We are here to help encourage...

    First MES smoke

I don't have a MES, but I have a AMNPS with a electric smoker. I would also burn the AMNPS from both ends, and start the cook at a low temp (enough for a good draft) for the 1st 30-60mins, and turn it up to full cook temp. I like to push it right at the 4 hour mark before the meat hits 140 to...

MES 30 with AMNPS vs Pellet Grill

Wow! I am sorry you feel that way. We all have our different needs and wants out of smoking and this site. I smoked over 15 years on a Camp Chief 18" propane smoke vault. I was able to do a few things really good. Other I had problems. It was this sites non-judgmental attitudes that led me to...
