Looks good! I wonder how the "aftermarket" control systems people are building are going to hold up over time relative to Masterbuilt's controls. I'm guessing that most well designed/built ones will hold up better over time, but that will take a while to get any data on.
I'm of the opinion that the thing being judged (the food) should be the only thing that matters. If that guy over there is making the best BBQ with his pellet smoker, or an electric smoker, or a weber kettle, or an offset smoker, or a UDS, etc, then they should be the one winning BBQ...

Oil/fat separator for making sauces/gravies/etc is one of the essentials I'd add that I didn't see anyone mention. I'm a big fan of making them from scratch and a lot of the time it's too oily/fatty if you don't separate it out for my tastes.

Mine has gotten wet from rain while smoking before without issue, if you have a top vent you might be better off rigging an umbrella or something to block some of the rain though, I keep mine under a bit of an overhang when smoking in the rain most of the time though. Shouldn't be a problem even...
p.s. if you are scared of nitrites and similar substances, don't smoke your meat... nitrite (NO2), NO, and NO3 (nitrate) are also produced as byproducts of combustion so avoid burning wood and just heat with electric elements and avoid any actual combustion process when cooking.... that "smoke...

IF you're still active duty ensure every bit of this stuff is documented in your medical record. If you aren't, see if they can link it to active duty. Sleep apnea is pretty much an automatic 50% disability rating with the VA....

I'm maxing out about 220 right now, but had to clean it in the middle of a smoke to get back to that. Since I do turkey, chicken wings, etc at 275, that's not gonna work.
