    The juices are evaporating and cooling the butt off. If the bone pulls out clean, it's done. You can wrap it and let it rest to comfortably pull it. I think it will fine! Mike

    Taking a yardbird for a spin

    Thigh IT was 174 after 1hr 15min, let it spin another 15 minutes. The leg fell apart getting it off the forks! :eek: The BearShot will be a bit later. I'm grilling asparagus and roasting brussel sprouts! Mike

    Taking a yardbird for a spin

    The first of my rehab cooks shall be a rotissirie chicken. It's a 5 lb bird with Tonys sprinkled outside and in. It's on the kettle for about a 1.5 hour spin. I'll check it at 1 hr 15 min. Better half keeps insisting I'm doing too much. This is how I relax! :D Mike

    First Boil got me in Hot Water....

    Wow Sonny! Sounds like a great time was had by all, that is a huge success! We do break our boils down to 2 or 3 pots. Dump the first one and while everyone is enjoying cook the next. The water is already hot and seasoned and doesn't take long to boil. You may want to add a bit more water...

    Tasso looks great Foamy! It has become my go to seasoning meat for beans lately. I tried it in red, white, and butter beans and it was great. Last week, I made a pot of pinto beans with Chilerellenos recipe but I added a 1/2 pound of tasso and simmered them all day. Delicious! Mike
