    Avatars and Usernames

At family reunions, ‘Robert’ (or some variant) was common. At one reunion someone yelled, “Hey Robert” and several heads snapped around. “No, I meant Maude’s Robert ( meaning me)”. Not wanting that moniker to stick, I went by my middle name ever since. Pic is me “tendin ma fars”. (hey, maybe I...

Kroger Good Sale in Dallas Area

Told my wife about the sale. Sez she: ”But the freezer’s full!” So, I say “Well, guess I’ll just have to cook it right away.” It actually worked!🤭

    Meat grinder

Went with the #12 3/4hp MeatYourMaker https://www.meatyourmaker.com/process/grinders/500-watt-grinder-12/1117072.html I got skittish about store bought ground and it’s health concerns. Besides, wanted to amp up flavor of burgers, pizzas, sausage, meatballs, etc and to make use of those brisket...

    Combining rubs?

If using commercial, you may be double- (or worse!) salting. If not, try it and post!

Jeff's Rub was a miss, what next?

Agree totally. I tend toward HBP and am allergic to most bp meds. Doc sez cut down on salt (main ingredient to most comm rubs), ergo started making my own rubs. Back to your question, keep in mind your whole process and presentation, as well as rub flavor profile. What protein...

    Classic Rub for Chicken?

We like a light dusting of hot honey hog and then a good dose of Simon&Garfunkel (parsley, sage, rosemary & thyme, basil, oregano, bay leaf and red pepper flakes). After brining of course.

Which pellet smoker is a good one?

Just my $0.02: We’ve had an RT-680 (predecessor to RT-700) since ‘14. Since then it’s gotten several ‘upgrades’ (including fire rod, fan motor, wi-fi controller, among others), most at little/no cost. Their CS is nothing short of phenomenal. As noted, an email to them triggered a timely phone...

    Condensation?

Probably a rookie question: I recently completed (if a uds is ever completed!) my drum and first two cooks. First cook was thighs, last cook was a rack of baby backs. After both cooks I noticed about 1/2 cup of water in the bottom of the barrel. It hasn’t rained in days, so it’s not leakage and...

Down to 3 choices of grills ..what's your pick?

just my $0.02: Sounds like you’ve got the grilling and griddling covered (jealous of the Blackstone btw!). I’ve got a RecTec RT-680, obsolete. It has a new hotrod, auger motor, display/controller and wi-fi. Why? Their CS is for life! Yes, more $$ but something to consider.

    Hello from Garland TX

Thank you! Heap many moons ago, I was on the Accelerated 10 Year Plan at that little education establishment you have there. Best 12 years of my life. ps-decided to show off the place to folklets and shiny new bride just before they tore Kyle down. Spent most of the week embarrassingly lost...

    Hello from Garland TX

Thank you all for the warm welcome! Oooh, I can dream! Would love to have a Blackstone! Problem is I’m running out of room in my ‘outdoor kitchen’, known by The General as ’our patio’. Besides, visitors might leap to the totally erroneous conclusion that I was some sort of talented chef….

    My new Drum smoker

Finally got my contraption in cooking trim. My pride&joy is the Tel-Tru thermo and ThermoWorks Billows Latest addition is the exhaust baffle. It’s a cut down electrical safety plate. Bolt goes thru a spacer and double-nutted below a spring to provide tension. Would’ve been simpler if I knew...

    DIY Tandoor Oven?

Actually, it’s a Smokey Joe mini-kettle I got originally for car camping. I think you can get from HD for cheap. I hunted a clay pot that was exactly same diameter, took a sawz-all to the base and ordered a set of wide skewers from Amazon. Works a treat!

    DIY Tandoor Oven?

I built something similar years ago. Made some kebabs but never quite got around to using as tandoor. But it makes a killer beer can chicky rig!

    UDS build

Kevin, I’ll try to help; I'm newbie but have the setup you describe, only used it once so here goes. You are correct, Billows is only inlet you need. In fact, ThermoWorks sells a yellow damper that snaps in where the protective yellow hockey puck comes out of. I highly recommend, as even when...
