You guys have me sold on another kettle. I guess my main concern is on every day weeknight cooks where I just want to seat a sous vide steak or cook some quick chicken thighs. Propane is so easy to just turn on and wait ten minutes before cooking.

Not looking at the 26-reason is I want something easy to fire up with no prep-literally hitting a switch. Hence the reason for pellet grills and gravity fed recommendations. I have a chimney starter for my WSM and sure it’s easy but it’s a few more steps than I want for a weeknight cook.
I’ve had an MES and now use a WSM 18.5” with a FireBoard and put viper fan.
I don’t like the cleanup and setup time associated with the WSM, but I love that it’s set and forget with the FireBoard.

Yeah, I noticed that the Thermoworks probe was about 3" inside of the Masterbuilt probe. However, it still seems like it was short cycling. I don't think enough heat was able to get around the cookie sheet and cook the pork butt.
Edit: I think I discovered the problem. I put the meat on the second highest rack and a cookie sheet with tin foil just below it on the third highest rack. I removed the sheet and the temperature seems to be registering correctly once again. I can only assume that the cookie sheet (a half sheet...
Thanks all-I didn't have a propane torch for the AMNPS so I used chunks for the first season. I accidently bought chunks and then read to use chips so I broke a bunch of the chunks down into smaller chips before putting them in the hopper. Seems to have worked just fine.

Bought an MES 40” for Black Friday. Looks like it’s got gen 2.5 internals but gen 1 external (vent on top right).
also bought some pellets and the AMNPS.
now to season it. The manual says turn it on 275 for 3 hours then add wood chunks toward the end. I’ve also read to spray it with olive oil...
Hey so one other question-how do you guys deal with finishing chicken? 275 degrees isn’t enough to crisp the skin. I can use my grill during the summer, but I’d rather not do that in the winter.

If it's a gen 1, that seems like a decent deal-and based on bearcarver, it's better than a gen 2, but not as good as a gen 2.5.

Done lots of research over the past few weeks about an electric smoker and I’m curious-what separates it from just an oven you stick outdoors?
the complaints I read are that the installed smoke mechanism on an MES only burns for 30/60 minutes and then you have to refill it which doesn’t scream...
