Need some advice- Klose vs. Patriot

So I'm torn here. I'm considering the 30" heavy pipe smoker from Klose or a custom 30" from a local builder here in Colorado- here's the debate 1) The local builder is a reverse flow- and heavy duty. The build quality is awesome 2) The local builder is a little more spendy b/c I have to...

Looks delicious Flip got some of those on the Q as we speak (If you break the corer, a butterknife works like a champ, just spin it around the outside to break off the membrane and it doesnt slice though like a normal knife would) Also have some shrooms and serranos on with the tri-tips- ,more...

    Cocoa Rib Rub Recipe

If you are going to put that in the smoker, I would not use the smoked paprika- will be incredibly overpowering on the smoke flavor. Usually when I'm trying new rubs out, I make a super small batch and put it on 3 or 4 ribs or a part of a chicken along with the rest of them being my usual or a...

Using baking powder in rub to crisp chicken skin

I have tried that method (In fact I have the Americas test kitchen magazine it was published in) and unfortunately, it also imparts a kind of strange taste to the chicken from what I found- in the regular oven. I'd imagine it's similar in the smoker, and without the higher temps it's tough to...
