    Kassler Ripchen

I spent 7 years in Germany and maybe saw 2 restaurants that even served sour kraut. I did see things similar to smoked chops, but most are beef items and schnitzel. My best friend came to visit and he loves kraut. Took us forever to find a place that sold it. mostly had to buy store bought...

    What's your worst smoking nightmare?

Good to know! I bet is similar to smoking burgers then. I haven't tried meatloaf yet.

Honing in my salmon smoking skills

I honestly can not describe how good the salmon is here. I'm not sure if I can ever go back to anything else. I found a fish market in Hachinohe that I go to and one filleted salmon costs about 3500 Yen which is around $34 give or take on the exchange rate. this one vendor does not pack it in...

    What's your worst smoking nightmare?

A few months back I had 6 pork bellies going in my Landmann 38 wide. I was out doing yard work while it was going. After sometime I came buy just to check the temps. When I walked up I noticed ash by my right vent. Odd. Kicked and sure enough ash came out. looked at the left vent, ash...

Co-Worker wants me to smoke ribs - How much should I charge?

I usually charge the cost of the food. so if meat cost 40, I charge 40. This is purely for bulk though. If it is otherwise I charge 10 for 1 Cornish hen, 10 for a pound of bacon, 10 for 1.5lbs of pulled pork. These aren't huge mark ups but doing so pays for all the meat supplies and usually...

Honing in my salmon smoking skills

Being station here in Japan, I have never tasted such amazing salmon. It truly is amazing. I'm looking forward to a near future TDY to Alaska so I can see the difference between it and fresh salmon there. That being said here are few picks of a couple smokes. I'm still trying different...

Bag big enough for whole belly

You definetly need to cut them up. This also helps the brine get in there. Plus if you use rib racks you can increase sq meat footage! I can fit 6 full bellies in my Landmann 38 wide like this!

    Thanksgiving stuffed fatties

I did these for a squadron event a little while back. used ground turkey (DUH) layered in some stuffing and cheese then rolled'em up! There were amazing and hit. Most of these noners had no idea what they were, but wrap anything in bacon and they will come!

    Landmann welder blanket mod

Awhile back I did a couple simple mods to my Landmann 38 wide smoker. I picked up and inexpensive welders blanket, pop rivet gun and rivets, 2 side clamps, and some high temp tape for the seals. Everything turned out great and I am able to control my temp much tighter now. The outside is even...

    Turkey smoke

A little while back I did 3 turkeys for one of our squadron events. Bred them up for 24 hours then tossed them in the smoke. my current go to smoker is the Landmann 38 wide propane smoker. Everything turned out great except the top two took a bit longer. I messed up and had them too close...
