    Anyone use a small fan in there smokehouse? I plan to install a stove hood fan in mine. Figuring it will help cook everything more even.

    The small button ones. If there really big I cut them in half. They really soak up the spices. So be careful. LOL

    It just depends on the fisherman. Some use grading tables in their boats. This lets all the trash and small crawfish fall out before getting to the sacks. The season is just getting going. Can't wait to have some. We usually have them at least twice a week either in resturants or at home.

    I use just normal salt and never had a problem.

    I just put salt with casing in a container and freeze leftover casing. Been doing this for years.

    Ordered this burner today. My new smokehouse is made out of 1" cypress and is 4s4x8 with an attached 30"x30"x30 brick firebox. Is it to big? Rate for up to 160,000. I liked this one because it uses outside air.image.jpg (785k. jpg file)
