I have made jerky in my stick burner using hickory. Some I marinaded and some just salt and pepper. Smoked them for prob 1 hour or so. Then into the dehydrator until finished. With hickory I found you don't need to be in the smoker long. Very strong smoke flavor...almost to much 90 minutes...

I use hickory for just about everything. Such a strong wood can over smoke poultry. I just picked up some pecan and cherry. So I will try the cherry next time I make chicken.

You can separate the point right off the smoker. I like to let sit tented for a bit to stop the cooking. Then separate the point and cube it up for the burnt ends. Then the flat gets wrapped and in the cooler to rest.

Looks great. A friend of mine uses this method for shoulder al.ost every weekend. You should be ok and not burn the brisket if your temp stays down. Like Mike said you can easily move the brisket away from the heat if needed. Maybe put the brisket on the grate away from the heat and spin the...
Looks ok to me. Like the other guys said smell is the telltale sign. Just trim off what you don't like and any gray or brown.
