That sounds good. As crazy as this sounds I have read where some have made burnt ends from pork belly. I cut a hunk off I’m going to try it from a butt if it works great if not well I tried something new.
I would do that for the butt. But I cooked big one yesterday to pull and freeze. The flat may not work but I think I will try it anyway. Never know till u try

I have one of theses the controller went out on it’s just setting in my shed may have to get it out and se if I can get it running again. I have a PID for my MES 40 I could probably use it with this one too. Hmmm brain gears turning.

I have a mes and a Traeger I use the 5x8 in the mes and the tube in the Traeger. There is not enough air flow for the tub in the mes the tray was designed for the mes. Hope this helped
I was having problems with mine. It used to get to 450 no problem then a couple of months ago it would only heat up to 330 maybe 350. I cleaned it out. Not much ash in the fire pot. Still no help so I dumped the pellets put cleaned out the hopper and ran all the pellets out of the auger...
I have both and have used both I like the AMNPS the best I can get almost 12 hours of smoke from my AMNPS the best I could ever get out of my MES cold smoker was 4 hours no mater what I did plus the chips got hung up in the chimney and I had to take a stick of something and push them down...
What ever u decide on u can’t go wrong. Just practice and each cook will better then the last. Get to know ur smoker and u will be doing more then just chicken and check out Bears step by step he has a lot of recipes on there and he uses an mes for everyone of them. I have learned a lot from him...
