    I broke into my freezer stash of smoked chuck roast to make my favorite snack. Smoked chuck roast quesadilla with queso chihuahua, spicy pickled onions, and tomatillo chipotle salsa. It's so simple, yet so perfect how the flavors compliment each other. I love it!

    Looks good to me! I do have a question though. I have only used a cheapo brinkmann and an mes30(with amnps) to smoke my stuff so far. I thought the point of a pellet smoker like a Traeger was that it automatically fed pellets to smoke in the heating element. Why the extra use of the amnps?

    So, I ran into another problem last night. Somehow the mes30 shut off early within the first 2 hours. So it took more than 4 hours to get up to 140F IT. I'm not sure exactly how many hours since my temp app graph is basically useless and the app shut down and lost data during the cook...

    There is a drain system on the smoker. But, the tray is pretty small. I also worry about grease dripping down onto the heating element. I am using an electric smoker with an amnps pellet smoker. MES30 with mailbox mod.

    Long time lurker, first time poster. Smoking my first turkey (and ham), need advice.

    Thanks! I already threw the carcasses into the freezer. I didn't have room for them in the refrigerator. So, I think I'll just go straight to the stock pot. Do you think I need to thaw beforehand?
