    You have to be careful to cut chuck across the grain if you want really tender burnt ends. Sometimes it is difficult to tell which way it runs.

    Ah... a smoke house, that is outside and exposed to the elements I assume. In that case I recommend a good quality spar varnish, it is made to stand up to the elements.

    At 275° 3 pound racks will take an extra half hour in the foil. Chef Jimmy J's reheat method is a good option if you can cook today.

    300° degree cook temp, foil with brown sugar and bbq sauce after 2 hours cook for another hour and they will be done. This is assuming loin back or St. Louis spares in the 3 pound range. Smaller will be less time larger a bit more.  Lengthening the cook time risks drying out the meat IMHO.
