Finally, some spring weather! Fired up the smoker for some ham, pork butt, and chicken. The pork is from the hog I won.

    bacon jerky ?

The bacon is already sliced. I have never heard of pig candy. Something new I need to look into. At the very least I will have plenty of bacon to wrap fatties and loins.

I was at the gas station the other day and saw some bacon jerky.  I was interested, so I tried it.  Basically tasted like dryed...

    Best prize I've ever won

Just got done loading my chest freezer with an entire processed hog.  Best part is, I only paid 20 bucks for it in a raffle!  I've never seen my freezer have so much meat in it.  Looks like I will be smoking plenty of pork in my near future.

First attempt at a boston butt

that definitely looks tastey!  Looks like your first attempt was a success.  Did you freeze some for later, or was it too delicious not to eat all at once?

AMNPS with cajun injector electric smoker

Thanks red. Might be a good investment for me to pick one up. I think my smoker is fairly close in design to the MES. I can't say that I have seen the pellets or dust sold in the store but I assume they are easy to find. What would be the difference between using the pellets vs dust?

I recently bought the cajun injector electric smoker and have done just a few smokes on it so far. I am wondering if anyone here has used the AMNPS with this smoker. I have been hearing alot of good things about the product but want to know if it will work well in my smoker. The smoker only...

    first butt.

Forgot the details. Cooked at 240 until it hit plateau at 162 IT. I pulled off the smoker and finished it in the oven in a pan covered with foil at 225 until it hit 200 IT. Smoked with apple chips and used the finishing sauce in the sticky. Couldn't tell whether or not the finishing sauce did a...

This was my first attempt cooking a butt. I think it turned out very well. 7 lbs. It took about 9 1/2 hours. I forgot to take a before picture but at least I remembered when it was finished.
