    Mustard alternative

I've used honey on ribs before with good results...I want to try a simple syrup with honey and bourbon soon, tho.

    whole hog questions

All, Happy Saturday! I'm cooking a whole hog next week for a co-worker who is moving to FL. I've been doing a ton of research, both on here and the rest of the interweb, but some of the information seems to contradict other info. Here are the specifics: -60-80 pound hog, dressed (I'll find...

    mulberry dust

My buddy is an awesome wood worker and he gave me a box full of mulberry tree sawdust. I'm not sure what to try it on yet. I'm thinking about using it to smoke cheese, chicken or fish.  Anybody have any ideas?

WHAT IS EVERYBODY SMOKING, GRILLING OR STEWING FOR THE 4TH OF JULY?

game hens or ribs...not sure which ones yet...I have to work a half day, so I won't be around to nurse anything. Whatever I make needs to be done in about 5 - 6 hours. Might just do some apps like chicken wings and stuffed jalapenos.

    Whats your favorite BBQ sauce?

I like homemade sauces, but does anyone know of a good commercial, thinner sauce? More like a mop?

I'm getting bored with chicken, ribs, beef and butts ( Creative Ideas Welcomed)

I've been wanting to try a smoked beef tongue, just haven't found a recipe that someone else has had good luck with.  I've done beef heart, cut into strips, rubbed, then wrapped in bacon. Don't remember the cook time, I think I just pulled them when the bacon was crisped to my liking. They were...

    Beef ribs?

I haven't made them in a while, but I've been thinking about whipping up a batch. If I remember right, they take quite a long time, although I don't remember the exact amount of time. I use Jeff's rub, but I prefer a less sweeter rub on my beef, so I cut down the amount of brown sugar. They are...

How many pork butts in an MES?

Greetings, friends! I want to throw together a BBQ for a friend that is moving and a bunch of people (not certain on the number yet) should be there. I have two MESs and I was wondering how many pork butts I can get 'em. They are the standard 30" smokers. I was thinking I could put two on a...

    Baby Backs

I wrapped the shrimp when they were still frozen, so they didn't overcook too much, but the bacon was still a little too 'soggy' for my liking. Next time, I'll pre-cook the the bacon in the microwave and wrap the frozen shrimp...that *should make the bacon crisp up enough without overcooking the...

    Baby Backs

Greetings from Terre Haute! I haven't posted in awhile, so I thought I'd share my qview of baby backs and bacon-wrapped shrimp, fresh outta the MES. I did a all beef breakfast sausage too, which turned out better than its pork brethren, imvho.
