    Question about Brisket

I also make additive freezer bags (Or Brian bags as my wife calls them.). I will use sandwich sized zip lock bags and put brisket or pulled pork in them. This way when I make homeade baked beans I have yummy additives to put in it. If I am being lazy I will use Busch's baked beans and throw a...

GOSM wide body: Grease pan and rack placment

Thanks Earl. I was thinking exactly that on the lowest rack. Next weekend I will try a Boston butt or two but on the top shelf. Lady J, it tasted OK but just was off in my mind. I guess the minor smoke ring might have psyched me out but my wife mentioned it didn't taste the same before I asked...

GOSM wide body: Grease pan and rack placment

Hi, I fired up the new GOSM wide body last weekend. It was nice, don't get me wrong, but I miss playing with the fire. Anyway I have a few questions from my smoke session. 1) I did one boston but on the first shelf above the water pan. I did two racks of ribs on the next rack above. I then...

    Quick question??

I found with cheese that using harder cheese, like white cheddar, makes a better non-melting exierence. Of course keeping the tempature down around 125 degrees also helps  . Take care, Brian

Gas smoker VS. Wood/Charcoal smoker: Smoke

Thanks Bob, the manual did not mention that one  . Will do. PG, I actually had run pulled pork up to the sales and maintence office. Gave them around 8 lbs., buns, coleslaw, baked beans, and potatoe salad. I got a very nice thank you note on the door. The maintenance department people...

Gas smoker VS. Wood/Charcoal smoker: Smoke

Bob, Thankfully no damage. I was worried at first as the box had a damaged corner. I refused to sign for it at HD until they opened it and inspected it. Pissed off the info. desk person but oh well. I told him I do that on all purchases as once sigend for I have no recourse. The unit is 1/2...

GOSM: Pros and Cons of water VS. sand

Cool, I appreciate the time both of you spent in educating me . Guess I don't want any kitty droppings in there so I will stick with water. In all seriousness, thank you. One other question on water. Temp. will be around 225-250. How long would a pan of water last in the gosm wide body...

GOSM: Pros and Cons of water VS. sand

I have read use water or use sand in the GOSM but no one states the merits of water VS. sand. So I am now wondering what they are. To me, a novice... Water have to refill as it evaporates, sand never has to be refilled. Water makes the meat moister, sand does not. I am at a loss here as I...
