    I have experimented with a couple for pork, but this one has been my favorite lately. Sweet and a bit of heat with the cayenne pepper. If your not looking for the heat, just dial it down a bit. Its all in what you find good and delicious! Enjoy!

    Thanks Kamphiker! I will have to take a closer look at the existing chip pan. I have my cast iron pan sitting on it, but like you mentioned, it could be pushing down and causing heat issues.

    Good Morning! Quick Question, What exactly are pork side ribs and can you use the 3-2-1 meathod? I have heard of spare ribs and baby back, and for one of them, you are supposed to do 2-2-1 or else they will be over cooked. Thoughts? Thanks!

    I had the same problem with mine.  Easiest way to get the flame lower that "low" to reduce heat, is to take the knob past high, towards off.  Once it passes the high mark and goes towards off, you can choke it right down to nothing!  No extra $$ with special valves or regulators.
