No idea.. I know I started with a 13.5 pound prime rib. After ageing and aggressive trimming.( I like all the pellecos gone.) we ended up with 9 steaks 3/4 to 1 pound each.

The first hour I was adjusting to get the right ambient I wanted. Then the dips are from my spriting hitting the probe since its a meater.
Started with a prime grade bone-less rib roast from Sam's. Put it in a Umami bag for 30 days in the beer fridge.

The only time I tried brisket in my sousvide it was very very dried out. Not sure why. Might have just be a really bad piece of meat. I tend to do briskets, pork butts/pork ribs on my smoker only. Then do hybrid smoke/sous vide on prime rib/eye rounds. And sous vide with reverse sear on steaks.
I'm getting pretty hungry, that looks great! I tried tritip once years ago, turned out ok, but I was young and not as seasoned as I am today. It not very common here and I cazn get prime grade brisket at sams for 3-4 bucks a pound.
Went by sams to grab a prime rib to dry age for steaks this summer and they had a great price on prime grade brisket so grabbed one as well!

Has anyone tried including a small wood split into the charcoal? I throw wood chuncks into it all the time and like the outcome. Seems like a nice 14-16" long 3" wide split surrounded by charcoal would work awesome.
So got mine today! Played with it for a bit. I like the duel seals. I tried the different modes and seems like it doesnt seal very well on low vac at all. I guess you have to press down really hard to get low vac seals? Im used to my cheap POS sealer, it makes good seals with no vacuum needed.
