    Camp Chef problem, how I fixed it.

    The Slide N Sear heat deflector in my Camp Chef PG36 warped. It's very thin metal, maybe 20 gauge. New one was $75 and would do the same thing. I got a piece of steel, 8"x13"x.125 to bolt on top. I bolted it on with 4, 1/4" bolts. I don't forsee this happening again.

    I saw this at the barbecue contest I entered. If there was a gadget or mod for a WSM, someone had it. My WSM now has this, I added the gasket to the door, and added the extra charcoal grate 90 degrees from the original. On a warm, non windy day I can get 12 hours of heat in my 18.5 WSM.

    Charcoal Chimneys

    I once had the chance to compare a Weber and some random brand, no idea who's. Same charcoal, both used one parrafin starter cube. We used a laser temp gun, the Weber was ready 10 minutes before the off brand. Mine is 12 years old, never any issues.

    Thank you. I watched a video by a guy who won Memphis In May, I was surprised by how much dry rub he used, and kept adding more during the cook. He used a thumb grinder. I'm using Killer Hogs Hot Rub, trying to be careful not to go to heavy. My test group (family and neighbors) liked it the best.

    My first competition this weekend

    Thank you. I've made lots of ribs for the neighborhood, everyone seems to like them. Or possibly just free food. When wrapping the ribs I've started using ghee instead of squeeze Parkay, as well as flavored honey and brown sugar. In a practice taste test the ghee got rave reviews.
