Do yourself a favor and wait until Black Friday sales are out. Grab yourself a ChefAlarm or Maverick temp probe. The probes that come standard with some units are not accurate.

"2. Can you still have dry food after cooking them in foil with some liquid??? This is the 3rd time i had dry ribs." - Are you ensuring the ribs are wrapped tightly and no steam escaping from the top. If I foil, I always use 2 rolls so the meat is sealed tight and prevent liquid leaks.

The recipe for the white sauce I got from watching this chef. The sauce was excellent and I am planning on smoking chicken thighs tomorrow using this sauce as a brine and glaze. Just waiting to see how much rain we get.

This was my first pork butt smoke on my JB. Turned out great! I also received my DG downdraft mod yesterday which I was able to use on this smoke. I held a constant 225 degrees during entire smoke.

I usually don't go this route unless I am bound by time constraints. I like to season my own ribs, wrap them tightly in cellophane and leave them in the fridge overnight. That way the rub gets more into the meat tissue. So yes, I believe if you prepared your own ribs you would be more satisfied...
Check out http://www.amazenproducts.com its a smoke mod generator. I use it pretty much all the time especially on long smokes. Also great for cold smoking on your MES:
