    How is Alder Wood for...

I believe apple would be a better choice for both the turkey and ribs. I am doing an apple cider turkey for my feast tomorrow.

    How is Alder Wood for...

I've used it to smoke fish (bass and salmon). It has a mild flavor. Maybe add some pecan or hickory when you do the ribs.

Smoking a Big Bird... NEED ADVICE

You should sign up for Jeff's monthly newsletter. Lots of great recipes and cooking suggestions. His newsletter I received this morning goes to the very heart of your question: Smoking  a Turkey Larger than 14 lbs As most of you know, I do not recommend smoking a turkey that is larger than 12...

    GMG Daniel Boone

This is unofficial so I haven't verified this information; taken from another pellet smoker web forum: "Just saw an ad on Craigslist from a dealer in Wichita with 2016 Black Friday prices. Daniel Boone $499 Daniel Boone WiFi $584 Jim Bowie $624 Jim Bowie WiFi $749 Davey Crockett WiFi $299"...

Problem with Green Mountain Daniel Boone probe

Do yourself a favor and wait until Black Friday sales are out. Grab yourself a ChefAlarm or Maverick temp probe. The probes that come standard with some units are not accurate. I'm waiting to see if Thermowork's new Smoke series will be on sale. It has dual probes to measure both meat and grate...

Family BBQ...and my ribs need more advice...

"2. Can you still have dry food after cooking them in foil with some liquid??? This is the 3rd time i had dry ribs." - Are you ensuring the ribs are wrapped tightly and no steam escaping from the top. If I foil, I always use 2 rolls so the meat is sealed tight and prevent  liquid leaks.

GMG Jim Bowie 1st Butt Smoke Qview

Hi - The recipe for the white sauce I got from watching this chef. The sauce was excellent and I am planning on smoking chicken thighs tomorrow using this sauce as a brine and glaze. Just waiting to see how much rain we get. I chose this recipe because I love mustard too.

GMG Jim Bowie 1st Butt Smoke Qview

This was my first pork butt smoke on my JB. Turned out great! I also received my DG downdraft mod yesterday which I was able to use on this smoke. I held a constant 225 degrees during entire smoke. This was a 6-7 lb. Costco butt. I injected it last night with Butchers Block pork injection along...

Pre-Seasoned Costco Pork Ribs w/ Qview

I usually don't go this route unless I am bound by time constraints. I like to season my own ribs, wrap them tightly in cellophane and leave them in the fridge overnight. That way the rub gets more into the meat tissue. So yes, I believe if you prepared your own ribs you would be more satisfied...
