I wouldn't use heating pellets for cooking though (just from what I have read)

I'm just using a regular store bought thermometer to measure the meat temperature. I lifted the lid every couple of hours to check it. The analog temp gauge on the lid and the digital read out were about 25-30 degrees difference.
