    Yep, if it is close to fitting, bend it at first. It'll shrink considerably, then you can lay it flat again. Separating it does work, though it'll be a bit tougher to manage the flat.

    Nice work, nice and juicy! Agree that chuck roast isn't brisket, but it's good enough to satisfy the cravings when I don't feel like doing a whole brisket, or the prices are out of whack.

    In my experience, Victorinox boning knives are top notch. They're great for their value and they last pretty dang long. If you want just a decent enough one that's inexpensive, you could look into some of the Mercer Culinary knives.
