    depends on the cut you have. I trim just about all of the fat off I can so the rub can create more of a bark. Sometimes when you start pulling you will still have a fair amount of fat, I just remove it.

    How much smoke?

    I have the same model. I screw the cap down on top to try and trap more of the smoke in. Also I recently added a smoke tube. Depending on what I’m smoking I like to get more smoke flavor on and that really helps.

    i agree with you and others. I thought it was just me. Some have said and it makes sense that your around the smoker and you get desensitized to them. I love them 2 and 3 days after.
