Great price on a prime brisket. My Costco is staked with them. You got the bend and it looks juicy. I’ve only done a couple smaller ones and haven’t got the bend like that yet. Probably keeps me from doing more.
depends on the cut you have. I trim just about all of the fat off I can so the rub can create more of a bark. Sometimes when you start pulling you will still have a fair amount of fat, I just remove it.
I bought one last summer. It has come in handy as of late with being new to smoking. When I’m prepping or getting food ready outside, my son will take care of them for me. mine won’t reach and kill at 4-6‘ like OP does. 3’ is good and sometimes finish them off if stunned. I would recommend this...
That’s a big boy. I’ve never cooked one of those yet? Any upside to having that bone on there? Is it just a looks and size thing? I eat mostly rib eyes once in awhile a filet.

I have the same model. I screw the cap down on top to try and trap more of the smoke in. Also I recently added a smoke tube. Depending on what I’m smoking I like to get more smoke flavor on and that really helps.
i agree with you and others. I thought it was just me. Some have said and it makes sense that your around the smoker and you get desensitized to them. I love them 2 and 3 days after. I like the idea of smoking them a couple days before but my kids won’t let those sit around. Especially my 8yr...

Jesus Lord, that looks amazing. Super great write up by the way. I just did my first plate ribs and loved them. After seeing these, I could do that all day long. I bet they cook faster also being cut like that. I have to ask how much were those?
