    Whiskey or Bourbon. You can cut it, or use it straight. LOTS of possibilities out there. You can use just plain water, if you want.

    S&P here.. I prefer to just taste the meat, and lately, we've been having nothing but brisket burgers (ground black angus brisket). Cook indirect and flip very often (ie once a minute). To die for, literally. :drool

    Absolutely, there are cuts on both that are good for smoking. That depends on what you like smoking/cooking. Not sure if I can answer the "value" question, as that's up to you. Some find it's worth it, others not so much. Also, Wagyu tends to cook a bit faster, so keep that in mind.

    Wow - 40lbs of charcoal to smoke for 8-10 hours? That's an awful lot. In fact, more than even the WSM, which can be some-what of a fuel hog.  Maybe that's a typo or something.

    Could be that your firebox isn't aligned properly and little to no air is getting inside.  It sounds like your starting it properly, so that doesn't seem to be the issue.  Can you snap a few photo's of the inside?     The first Brinkman posted is going to be the better smoker. The Landmann above, would probably be the better griller or have better options for grilling.
