    Last year I scored a couple of tanks and was ready to start my build in the winter. I was offered a remodel job that I couldn't turn down so I wasn't able to start until this week. this was the plans I drew last year First cut

    I would suggest Pot luck. Everyone has something that they think is there best dish. You cook what you want, enter it and may the best dish win. This would give everyone who has ever thought about entering a chance to show their stuff. There would be a variety of dishes to vote on. Dennis

    For those with small children!

    My prayers are with you. I have a 3 year old grandson, and I worry about things like this happening. They are just so quick at that age, a few seconds is all they need to get into trouble. I am preying for a full and speedy recovery.

    I buy pork butts and cut them into pork steaks 3/4 to 1 inch thick and smoke them. I rub them heavy with my rib rub and smoke low and slow. They are done in a couple of hours and are always tender, juicy and delicious. I never buy pork steaks anymore, I always cut my own.

    brisket is on

    I started a fire about 9:30 last night, then filled the smoker full of oak. got up at 1:30 to a nice bed of coals and a temperture of about 220. I  fed her a little cherry and pecan, and got the brisket on at 1:55. Tried to lay back down but its not working. Looks like its going to be a long day.

    Smoking a brisket, need post cooking advise.

    I always save the juice from my briskets, put it in a cooler then when your ready to reheat, bring it to a boil then pour it over the brisket and reheat. I usally do this in a steam pan.

    You really need to try Jeffs rub. Well worth the money for the recipe. I have made a few changes to make it my own, but you will not find a better recipie for ribs.
