    Ribs...

    The verdict is in and we have a winner. Folks enjoyed the ribs. IMHO, the racks were a little tough, but the country-style ribs were great. The smoker got a workout this weekend and so did the cook. Now that my belly is full its time to clean the smoker and go hit the hay.

    Ribs...

    The ribs went on at 10:00 this morning. Here is a pic of them before going in with mustard and Jeff's rub. I also took a pic of them before I wrapped them in foil (3-2-1), but the camera was fuzzy. More pics to come...

    I'm going to do some onion and bell peppers today and found this thread. I was also thinking of just qtring them and rubbing them down with EVO and salt and pepper. My smoke time on the meat is going to be ~3-4 hours at 225 so I hope they will be done in time. I will post my pictures either...

    Long day but looking forward to tomorrow

    gypsyseagod did the same thing I did when I read Ron's post, AHHHHHH, check the fridge!!! I have a mountain of ribs smoking tomorrow that someone else bought! Ron, sounds like you will make a full recovery with all of the grub. Have a great fourth!!!
