Well, it is 5:24am and the grub is on. Here is the pre-pic. It is very nice outside. I think I will go sit on the swing, smell the mesquite in the air, and enjoy the morning. Then it will be back to bed and cuddle up next to the wife and take a nap. More q-view to come...
One thing I meant to ask about your brine. I noticed you are using a metal pot. I have always heard to not use a metallic container. I'm not sure the reason. Have you ever noticed anything different?
Welcome Pete. This site is awesome and the people are too kind. I guarntee if you frequent this site often, you will learn more than you ever thought possible. Enjoy that new smoker!
Hey Trece, I noticed your MasterBuilt smoker there. I have the same one. Do you like it? I have to say it was hard for me to go electric, but so far I have done 10 - 15 smokes on it and it has been turning out really good results.
Tomorrow morning (4:30amish, woof), I will be putting on a brisket, butt, and two chix. I forgot to take some pre-pics, but I'll post some when everything goes in and I will give more as the day goes along.
I hope your weekend smoke goes well for you!!!

This Saturday we and three other families are leaving for a week at Gulf Shores. We rent a beach house down there and this time I smoked a bunch of meat to take with us. I smoked a pork butt, pork loin, a brisket, and I did some chicken qtrs (they were for dinner Sunday night). I stuck...
I bought some county-style ribs earlier in the week and I went to rub them down last night and they were past their sell-by date and looked "green". So I made a trip to the local supermarket and they didn't have any of my usual meats on sale or in stock. But they did have 3-4 lb eye of round...
You guys are cracking me up. Serisouly though, thanks for the suggestions. The thing is there are about 100 great ways to do a brisket, it is almost impossible to pick just one.
And for those of you have not tried Jeff's rub and sauce, people are telling the truth. It is very good stuff...
Doing a brisket, butt, county-style ribs, and a few fattys. Its funny, I think I'm now officially addicted to smoking. I smoked Sat, Sun, and now Wed. My wife might have to commit me...
If any of you pitmasters out there care to share your favorite rub and mop for brisket, I'm all eyes. I have one sitting in the fridge and plan to smoke it on the 4th. I think I have the cooking down, just looking for the rub that will make people say, "Darn that is the best brisket I have...
