Ribeye Steaks / First Asparagus of the Year

Ribeye steaks, homegrown Dexter steer, seasoned with salt. First asparagus of the year. Only 4 spears, but they're starting to pop up all over. Red potatoes - smashed with olive oil, garlic, rosemary, salt, pepper. I'm not very good at grilling smashed potatoes. They always fall apart. But they...

Best way to save a 10lb Prime Rib??

Go ahead and cook it, if you're feeling up to it, and freeze what you can't eat. It'll still be good. But if you're feeling bad, just chuck it or give to a neighbor for them to cook. Don't risk making yourself sicker.

Tri Tip on the Santa Maria

It had some really nice marbling. I know what you mean. Dexter cattle can make some good beef. Ha ha. Good idea, but it would take some mighty big bites to eat it. The stars were aligned. Yea, and they fatten pretty good on grass. Thanks Thanks Try a beef processor in your area? Or even...

Another Great Beef Belly Bacon Experiment!

Yea! Homemade beef bacon! You got a pic after frying up some slices? I did my first batch a few months ago and sliced by hand, so maybe a little thicker than your's. I had to fry slowly to render the fat, otherwise a little chewy. Flavor was much different from pork.

Need beef ideas for a quick smoke.

I was hoping you would get more suggestions. I would also like to know some "quick smokes." I really like pulled/shredded beef, but unfortunately it's not quick.

First cook on the CI skillet. NY strip

Looks like it turned out pretty good. For steaks I usually oil pan real good with paper towel, set electric stovetop to medium, then toss on the dry/brined steaks just before pan starts to smoke, cook maybe 2-3 minutes per side for 1" thick steaks.

Flank Steak on the santa maria

What used to be cheap cuts are now expensive cuts. They are fun to cook on, but also burn up the wood. Good timing. Our dish washer just broke, and we are looking for a new one. The aroma of meat roasting over an open fire. You'll have to show it off when it's running. Yea, I need to make...

    Replacing CI with Carbon Steel

Lemon and tomatoes are supposed to be bad for the seasoning, even for CI although I never had a problem with my CI. Maybe it depends on how deep your seasoning is. Here is our previous 20 year old stovetop. I used cast iron on it all the time. Don't remember how marked up it was when we moved...
