I am going to be entering my first competition in September and I want to start practicing. Does anyone have a good rub recipe they that do not mind sharing? I have a few of my own, but I want to experiment to get the best flavor. Thanks.
It has been a while, but I am going to be smoking two 5 lb birds tomorrow. I was planning on beer can method, but wanted opinions on if I should brine or if the beer will be enough to keep moist?
My brother in law loves my brisket, but thinks he can do better so he challenged me to a throwdown at the family party on Sunday. Only problem is that I have so much going on this weekend that I am going to have to smoke it tomorrow and reheat for Sunday. Not happy with this but nothing I can...
Just discovered I had a senior moment (not close to being a senior). I should have used my UDS but instead I pulled out my WSM 18. Got it all heated and ready to go. Pulled out the ribs and the two slabs are to big. Had to dig and get my rack out and wrapped them around to fit.. do not like...
picked up two slabs of spare ribs at walmart and I tried to get the membrane off, but could not do it. This is the first time this has happened to me. I usually use a fork at one end to loosen it up and take a papertowel to grab the membrane and it usually comes off nice and easy. I ended up...
I want to have a SuperBowl part and cook a bunch of ribs on my UDS. Not sure if this will work, but my idea is to stagger the ribs on top of each other. I was going to lay 3 ribs down and lay three on top, going the opposite way, and so on. Do you think they will cook evenly? I would think...
It there a better thermometer than the Maverick? I have one and the range is terrible, and I know others have experienced it. It is useless to me because of where my smoker is and where I keep the remote unit. It is only about 30-35 ft away in the kitchen, but has a couple of walls and it...
Well after a few weeks I completed my first UDS. I am hopefully going to get some pictures posted. What an experience. First I burned it out twice, then sanded it down, then took some steel wool to it, then bought a black and decker steel brush for the drill and did the whole inside. Some...
I am not real worried because I know that it is a food grade barrel. Being the first time doing this, I just want it to be safe when done. I think I am going to give it a few more burns, scrap with a wire brush, and wash it with a power washer.
The tan did come off with the burning. I have not done any grinding as of yet. I did a second burn yesterday and to get some more of the residual stuff off. I will try to take some pictures tonight and post. This if my first one, and I am not sure what the inside is supposed to look like.
It was not bad at all. i was worried because I know the red one's are a pain. I need to gather some wood from the dead trees in the backyard and do another burning tonight.
I started to burn out my barrel. Most of the liner burned out, but I am going to do it again to be sure. I noticed towards the bottom of the barrel (where most of the fire was) the color looks a little pink. I am not sure if this is what it should look like. I guess I would like to know...
I have read so much about UDS that I wanted to try it. My brother in law scored me a free barrel from a food manufacturer. The only thing is that it has a tan lining inside. I read on other sites that some barrels come with a red liner and the only way to remove it is by sandblasting it. Am...
I was all excited about cooking some steaks tonight. I filled a chimney full of Cowboy and when I dumped in the grill, I noticed a unusally large piece of word. I pulled it out and I have no idea what it is, but I know it is not wood. I have been looking at it for a couple hours now and still...
