    Who Smokes Venison ?

I brine all my wild game. I think it helps it to retain it's natural juices.

    my first all-nighter

Chris, if you don't mind my 2 cents here, the Black and Decker model is no where near the quality of the Tillia. And the bags are pure junk. I had one and used their bags, and nothing but disappointment.

    Red Buds

I love the red buds. They grow wild here in Southern Missouri too. The forest is so beautiful in the spring when the red buds, wild plum and dogwoods are in full bloom. It is claimed that Missouri is home to more wild flowering trees and wild flowers that anywhere in the world. I don't know if...

    What am i doing wrong?

Yeah, what squeezy said. What I do is prepare with rub the night before, start my fire in the morning and take meat out of fridge at the same time. Let the meat reach room temp and smack on the grates. Smoker at 230º or so, but not above 250º, unless I've done something wrong or under real...

    Looking for a rub recipe

It doesn't take much red pepper to heat things up. Try the rub you're using, keep the chili powder and add some honey or turbinado sugar.

    my first all-nighter

I have never smoked coffee. I was asking if anyone HAD ever. When I do an all nighter, I put a pot of coffee on the firebox and let it cook like that. But I do cowboy coffee, where you just but your grounds in the water, no filter. I drink mine straight, and my wife strains the grounds out. I...

    Fishin' Grub

We have had a lot of rain this spring. The last few years have been so dry, the springs and rivers never flushed into the lakes. Now they're flushing pretty good. That's probably why the lake is a bit murky, especially on that side.

    my first all-nighter

Great time of year for an all nighter. Don't forget the cowboy coffee on top of the firebox or even in the firebox if you have the right pot. Hmmmmm....................Anyone ever smoke coffee?

    Fianally Done

Well Debi, you wouldn't make very good Iowegian, that's for sure. I don't mind pork fat in the right place. Never in my pulled pork! I don't like the texture of fat with the texture of the pulled pork.

    Building an offset smoker

I got a couple of broken images, but the first one came through. So far so good. I hope I can be of some help to some of you. I have been working on my smoker for about 10 years and I learn something about it, either from IT, or from here. I certainly am no expert nor am I a professional...

    Fishin' Grub

Don't know about the smoked bologna, but the fishin' sounds great. My mixer truck has a huge Make-a-Wish logo on the drum. The company that I work for puts logos for non-profit organizations on the drums. I'll probably be somewhere near Tablerock lake pouring concrete on Monday.

    Photo Gallery for various Smokers

I don't get it. I mean, I can understand why it's hard to get some things in Australia, but Canada is connected to the US. And what about manufacturing? Do you guys make anything? You can't swing a dead cat without hitting a custom pit builder here in the states. Maybe one of you guys in Canada...

    Reheating Pulled Pork

Cover and nuke it. Folks if you plan for that plateau, you'll make dinner everytime. I can only speak from the standpoint of a stick burner so humor me. Get up early to start your fire. I don't care, 4 a.m. if need be. If you get the fire going too early, big deal. Plan for it and have extra...

    How do you save money?

This is good guys. I use plastic concrete test cylinders and lids for dry goods storage. They're cheap, seal very well and they match. They're great for stuff like flour, sugar, beans, rice, whatever. You can get them at any concrete plant. They hold about 10 lbs of flour or sugar. You can wrap...

    Who Smokes Venison ?

Well, some of the best recipes I've used are posted here. I do have a rub that is the best I've ever had and I think it is unique. That is to say, I don't believe any one's ever done it. That's a heck of a statement to make too. I hope I'm right. But I'm saving it for a competition, or I might...

To Cure or not to Cure – Take Two!!

This is exactly right. This method produces a partially cooked, smoked ham. Usually when you buy a smoked bone-in ham at the supermarket, this is what you get. Check the label next time, it will say "partially cooked." Keep your butcher, and smoke your butts the way the super folks here have...
