I use a KME, from everything to pocket knives to 12” slicer.

@chilerelleno beat me to it. 1 1/4 to 1 1/2 hours per pound. But remember that’s only a guide. The brisket will be done when it’s done so caution on side of longer time. Won’t hurt it resting for several hours if she temps out sooner.

The two probes are different. Short stubby one for grate temp ( don’t think it’s long enough to get into middle of a butt/shoulder or brisket), longer thinner probe for food. you could order a 2nd food probe and use it that way. The receiver unit the probes plug into would work with 2 food...

They now have a 4 probe unit (signals) that also supports a billows. It’s pricey. I have a smoke which handles 90% of what I do. But also have a 4 probe inkbird (when they had a crazy 65% (I think it was) off sale last year). That unit works well and for the cost a good value IMO.

Not much help with smokers you’re looking at (I have an OKJ Highland).
However as for therms, I want to also say the Thermoworks Smoke is great if you can get by with just 2 probes. Normally that’s all I need.
When I do need more probes, I also have an Inkbird with 4 probes.
