    I use a KME, from everything to pocket knives to 12” slicer. Small learning curve but razor sharp results. I use a diamond steel until the need to refine the edge on the KME.

    Thanks! 125 seared to 135, let rest for 10-15 min final temp in center 140-145. The ends (med/med-well) to center Med to med/rare, covered everyone’s preference.

    @chilerelleno beat me to it. 1 1/4 to 1 1/2 hours per pound. But remember that’s only a guide. The brisket will be done when it’s done so caution on side of longer time. Won’t hurt it resting for several hours if she temps out sooner.

    The two probes are different. Short stubby one for grate temp ( don’t think it’s long enough to get into middle of a butt/shoulder or brisket), longer thinner probe for food. you could order a 2nd food probe and use it that way. The receiver unit the probes plug into would work with 2 food...

    Thermopro TP-20 has issues/what is a better product?

    They now have a 4 probe unit (signals) that also supports a billows. It’s pricey. I have a smoke which handles 90% of what I do. But also have a 4 probe inkbird (when they had a crazy 65% (I think it was) off sale last year). That unit works well and for the cost a good value IMO.
