I have a question about encapsulated citric acid and powered meat mixers. I am getting ready to try ECA in some pepperoni sticks and I’m not sure if I can mix it into the meat with the mixer attached to my grinder or if I should mix it by hand.

I took a shot at getting some 17mm mahogany collagen casings and a 3/8 tube from smokehouse chef. Just as I suspected my cabelas 11# stuffer can’t budge it.Anybody have any ideas, I tried spraying the tube a still no dice, I was going to try my jerky blaster but I’m afraid it will break.
