The only thing I would add is to be careful what you use for the spice, if it is pre-made, check for salt, it will make these little delights turn salty on you, and no one wants that!
This is my 6 year olds favorite thing to make in the kitchen! Fruity or dark beers are great! Best one so far was Sam Adams Cranberry Lambic. It wasn't a great beer, IMHO, but made a killer loaf of bread!

Seems to me there is a lot of variety of temps among smokers, but my cheap electric brinkman never seems to get above 200 degrees as measured at the thermometer I installed in the lid. Is this low temp standard for these models?

After they sat for a bit, the flavor turned a little salty. I went back and looked at the seasoning mix I added to the brown sugar and guess what the first ingredient was? D'oh! Next time I'll do them a little differently, but there will be a next time!
Thanks for all the welcomes and advice guys! I just whipped up a batch of the pork shots, and they are awesome! As soon as I pulled them off, I slapped a big hunk of salmon on the smoker, we'll see how that works out!
So after all the reading I've been doing about the pork candy, I had to try some. I raided the freezer and found some spicy sausage, sliced it up & wrapped it in bacon! Mixed up some brown sugar & cajun seasoning, and here we are..

my smoker didn't come with a chip pan, and there is no light for the heating element. It's pretty basic!
As I was enjoying some leftover lasagna, it occurred to me that this might make an interesting dish in a smoker. Has anyone tried smoking casserole type dishes like a lasagna?
