I just bought a COS, the Chargriller Smokin Pro. Was pretty easy to put together. I didn't do anythiny to make it less leaky except for some gasket around the lid. It is what it is.
Anyway, I did my first cook this weekend. I smoked country style ribs and short ribs...
I once had a PBC. It was a good cooker. But if you want to be able to control temps to your liking, it's not the cooker for you. It's a dump the coals and let it ride cooker. But it is significantly cheaper than Gateway and Hunsaker so, it's a plus there.
I started my pellet journey on a Z grill. Only reason I sold it was because it was a bit small. But it was really nice. There are a few Z-grill Facebook groups with people who swear by them. Customer service was good too. Not a scam at all.
Hopefully you found Smokin Dad BBQ on YouTube- it's kamado city there. To be honest, with my KJ Jr and another ceramic kamado I don't find myself having to do too much fiddling to stay near temperature without a fan. Bring the cooker up to temp slowly, let the ceramic get heat soaked, then put...
I'm intrigued by the resting. I normally smoke cheese for about an hour with pellets and then rest it for a few hours. I blot off any moisture and then vac seal the same day.
I find that any longer than an hour or two with pellets is too much smoke for me.

Did some ribs this weekend. I seasoned up a rack of St. Louis cut ribs with some Kinders AP and Heath Riles Pecan. They went on the SNS Kamado with some lump and pecan wood. Spritzed them with apple cider vinegar and bourbon every 30 min and gave a glaze of Stubbs spicy BBQ...

Haven't posted a ton lately but I think I finally figured out my phone issue. Anyway I felt like some jerk chicken tonight so that's what I did. Took some drums and seasoned them with Malcom Reeds Jerk Seasoning and onto the kettle + vortex. Threw some maple pellets on there...
I'll keep my eyes open for a used one too. I don't need anything ASAP. I've been looking for used ones for a bit but they don't pop up often in my area. Fingers crossed!
