In Memorium to My Smoking Buddy

I'm sorry for your loss. It's a tough time, losing a dog you've had for years. I just went through it March 1st, losing mine to an undiagnosed tumor on her spleen that the vet missed. You and your family are in our thoughts and prayers.

    Lightning Got Me Again!!

Good luck with getting things fixed, and glad everyone is safe. I remember being on the flight line back in about 02, on top of an aircraft, and seeing lightning hit a fire bottle maybe 75 yards away. Scary stuff when you see it hit. Lucky it didn't use me as a lightning rod. Look forward to...

    Issues with indirect

I used an offset for several years. One thing I would recommend, is using chunks instead of chips. They tend to produce more smoke. One other thing. If you dont have tuning plates in it, you might want to look into them. They will help even out the heat, and the smoke throughout the chamber.

    Weber Smokey Mountain cook tray

Might be a pain to make sure you get the body on after start up. Other than that, I can't think of any real drawbacks. I dont have one of those carts so not positive. For the bottom shelf, if that wite is solid and stable, maybe just attaching some steel flashing from lowes or home depot...

    Weber Smokey Mountain cook tray

Want to make sure I understand. Can I safely assume what you are referring to would be along the lines of a shelf to use that's on the side of the cooker? Or are you thinking more along the lines of a cart to move it around?

I said to heck with it. (Long and pic heavy)

I was actually thinking more along the lines of using the gas burner, after replacing the hose of course, for a discada. I have an electric wok, and it works well, but it's not quite the same. I found a link in the discada cooking section to pick one up, and may be doing that a bit later this...

New coal grate, metal for firebox and tuning plates

Haven't had your specific smoker, but I used to have a Brinkman smoke-n-pit pro. I didn't use bars, like you are, however they will work. Instead, I used a plain old el cheapo steel (i think) cookie sheet. Placed one end directly against the end where the firebox is. This did 2 things...

I said to heck with it. (Long and pic heavy)

Mods: if this needs moved please feel free to do so. I wasn't sure if it should go here, in the build forum, or under ECB. So I took a chance. So, a year or two ago, the wife went out and got me a smoker. Of sorts. I guess she had heard me complaining about wanting to smoke again. The one...

I have checked craigslist for barrels. That's how I know there are none locally. Been checking off and on for a few months now. Based on the answers here, it sounds like perhaps the 18" WSM is the way to go. Now to read up alot on how usage.... Thank you for all the replays and opinions...

It's not that I prefer a gas grill. The gas grill will be for when my wife wants to grill something for supper. Since I work 2nd shift, and she isnt comfortable using charcoal, due to her disabilities, the grill needs to be gas. The smoker, on the other hand, will be my toy. I think, as...

Thank you for the reply, @fivetricks . I was impressed with the build on the horizon. It uses 2.5mm steel on the cook chamber and 2mm steel on the firebox. It certainly felt more solid than the Brinkman offset I used to have. If I may ask, what kind of smoker do you use? I would be...

I need new cookers. Stores I have local are Home Depot, Menards, Lowes, Academy, Cabela's, Walmart, and not quite as local but close, Tractor Supply. My last offset smoker I gave away, when I transferred out to Guam. While there, I converted an Electric ECB to charcoal. I gave it away when I...

    Hello from Kansas

I'm new here, but not to smoking. Used to hang around another forum, more reading than posting. Unfortunately, the activity in that forum seems to have lowered drastically since I last participated in it. I've used an ECB, a Brinkman offset, and converted a Brinkman electric smoker to...
