    I smoke in reasonable weather in the winter. Here in Idaho, anything above 40 degrees is "shirt sleeve " weather. I have smoked pork shoulders at about 20 above. It makes you appriciate remote reading thermometers. I had not thought of using a welding blanket. Great idea, thanks !

    Awesome ! Those look great . That's the same recipe we use at our house. Here's a tip : throw the bread crumbs and milk in the microwave for 20 seconds or so, and they are ready to mix right in. Saves the 20 minute wait =)
