Just had a thought, sometimes they can be dangerous. To help keep the temps down for doing some low temp smoking, like jerky, but still keep enough flame to keep the wood smoking what if you where to put ICE in the water pan??
I have found that when i'm smoking on a very small flame, like for jerky, that I had to move the chips down right on top of the flames to keep the smoke going
Texas-hunter, i just opened a package up and no the back strap was not attached to the top of the rib. They are set up with like 2 rib bones about 6" long with alot of meat on each side of them. They look really nice with alot of meat on them..

When I was smoking some jerky the other week I had a really hard time getting the chips to smoke. I ended up taking the rack that holds the wood chip pan and flipping it over to get it down on the flame. anyone else do anything different???

Cman95, I was over in Zimbabwe Africa this past summer for 14 days and the locals where ALWAYS smoking something might not want to eat it but it was food to them. And yes it is VERY POOR over there all over makes one very apreciative to live in the states. Be Safe.
