    Stroopwafels

I used to travel to the Netherlands once or twice a year for work. Stroopwafels were everywhere, and oh, so good! Warmed over a cup of coffee really works the magic. The other interesting thing I found at the Amsterdam (Schipol) airport were tulip bulbs...not surprising, perhaps, but they...

Prime Tri Tip - Smoked/Seared with Surfing Companions Dressed in Chimichurri & Mango Salsa!!!!

Beautiful plates! You manage to combine many of my favorite foods into those meals...Tri tip, mango salsa, chimichurri, scallops, lobster...I'm thrilled to have just one or two of those in a meal!

Creative (and rare) yet quick and easy - ideas?

Baked potatoes. Not flashy, but couldn't be easier. Just put a couple of spuds on the smoker for a few hours...they pick up just enough smoke to set them apart from everyday bakers. We'll cook a couple whenever we have unused room on a smoker rack.

Tri tip and bacon-wrapped sausage appetizers

After many years of failing to find tri tip anywhere in the Northeast, I added one to a Porter Road order using one of the gift certificates I'd won in a Throwdown. Yesterday it was time to cookI I trimmed it, yielding maybe 1.25 lbs of beef, and dry brined with a light coating of kosher salt...

As did I, though for the first time ever, it didn’t get picked up.

Chicken thighs, practicing for a KCBS competition

I may have failed to provide an update! I entered the KCBS Red, White, and Que contest in Jackson, NJ in 2021 and 2022. I was in the backyard division, so only smoking chicken and ribs (the master division cooks chicken, ribs, brisket, and pork shoulder, though they are judged to the same...

    WSM wheels?

This gets discussed occasionally on the Virtual Weber Bulletin Board. https://tvwbb.com Some ideas here: https://www.virtualweberbullet.com/wsm-on-wheels-platforms-casters-carts/ I like the looks of the triangular one, though I've no direct experience with it...

Heads up...Costco has Kingsford Pro Comp back in stock!

I saw Kingsford Pro Comp in the East Hanover, NJ Costco just yesterday. Surprised me. I'd recently bought a two-pack of the Kirkland brand, when that was all they had...haven't used any of it yet.

Grilled pork tenderloin for the BBQ battle

We were going to grill pork tenderloin this weekend anyway, but when I saw @bmudd14474 's fine idea of a weekend contest, I figured I'd take a few photos along the way. We had two 2.5 lb tenderloins, so after minor trimming I rubbed on with The Missing Link Spice Rub, the other with Meat...

    Cast iron brands

Here is an interesting graphic on the chemistry of cast-iron cookware. I learned I'm not seasoning mine at a sufficiently high temperature (450F is recommended) https://cen.acs.org/food/food-science/Periodic-Graphics-chemistry-cast-iron/102/i9 There is a whole series of these on other topics...

Re The Eclipse - Add your pics and experience here

Late trip report, as I don't post trip plans to social media until after I'm home. We planned to drive to upstate NY. The forecast wasn't great, but it looked like the best odds were to get as far east as we had time for, on the southern shore of Lake Ontario. We ended up at the delightful...

Just Curious On What All States Do?!

Where in Idaho? I'm from Twin Falls, but now that I'm retired from a job that kept me on the east coast, we are planning to move back soon, probably to the Coeur d'Alene/Hayden area.

    What are you reading ?

I've got a decent collection of Patrick McMannis books. About time for me to re-read them as well. I love his stuff! After years of wanting to read it, I finally got through Atlas Shrugged. It took quite a number of renewals of the library's e-Book to get through all 1200 pages. I...

Smoker ran out of pellets, please help.

The internal temp was below 140F for over 4 hours, which violates the 'don't let the meat be above 40F but below 140F for over 4 hours guideline. The graph cuts off before the internal temp gets back above 140, but it looks like it was going to be about 5 hours total in the danger zone. Not...
