I fully intend to cook them to IT. The 6-8hrs is just a guess on the time it will require to reach IT. If the unfoiled butt turns out a little dry I will save it and use it in beans or chili. I have no worries about both not being eaten in a timely manner.

I have a 7lb Weston all steel construction stuffer. It works great! I have done a few batches so far without problem. Just need to bolt or clamp it down though.
Thanks Mad Kaw! They had an area with them and I picked up 5 slabs of them today. I have only done baby backs, so this will be something new for me. They look good. I think the first weekend with warm weather up here they will be on the smoker!

I would like to try a beer from out your way. Only problem is I am 2.5hrs from Kzoo, and it is very difficult to find in my area. I know they have problems finding it down state because it sells quickly.
I was at Bell's in Kzoo a few weeks ago. Hopslam right from the source is great! Also had their Bourbon barrel aged cherry stout. It was very unique and had a nice kick to it.

Ribs turned out pretty good. I tried changing the cook a little since my previous times they would fall off the bone with every bite. They left a bite mark, but had just a touch too much tug. Now if I can get them inbetween they will be perfect!
