    Yes bone in fresh ham not cured so I'm treating it like a pork butt. And shooting for 190 or so to pull it for New Years dinner. Going to be a long night. Smoking it in cherry and going to finish it with apple since I need apple for my side dish of smoked Mac and cheese.

    I was at 225 with onboard analog thermometer but I don't have a back up to check that. I think it is going to fast. But I got a digital meat thermometer for Christmas and this is my first time using it. So this is my first time really seeing how it goes up. So I could just be paranoid. Lol

    Four hours into a smoke and already hit 100 degrees should I be worried. It is about 18lbs. The two pictures attached are before going in the smoker and two hours in more to come.

    I need some suggestions on how to prep and cook my fresh ham! Temp Rub (if any) Hour per lb. wood Any thing else that maybe thought about. Thanks in advance and will definetly post pics.

    If you want to do an appetizer ofsome sort I like to cut japeleno in half and stuff them with cream cheese and a small piece of prok and wrap them in bacon. You can either grill those or smoke them since you will have it fired up. I believe they call them grasshoppers in Texas if Gary s wants...

    Good morning from Atlanta ga crappy weather outside with brisket smell in the air in my new 30" mes worried about screwing a good piece of meat up. But with all the post I feel a lot better. My name is Bill and plan to spend a lot of time on this site for tips and ideas.
