The use by date is a use it or freeze by that date. I've had pork and beef last a long time in my deep freezer. Just thaw it and do what you do and enjoy.
I've only made one pulled pork and I didn't foil it and got really bitter bark. Had to toss the bark no saving it. I'm planning on making my next one in foil.

I take out the water pan and whatever racks I've used clean them inside and washed it most the gunk off and then throw in the dishwasher to get rest off. Is all I have done so far but these ideas about steaming and whipping down sound like something to give a try.
I figured with a 8 lb picnic pork shoulder I would be looking at about 16 hours to compleat but it turned out to be more like 20 hours. I started it last night at midnight. Finished on the smoker at 7pm today.
After 8 hours I checked IT @ 165 so keep letting it cook.
