Chicken Sausage: Both Smoked & Poached

I like using chicken for sausages as well. As much as my family likes the Thai-style, I think they actually like this sun-dried tomato & basil chicken sausage even more: https://www.smokingmeatforums.com/threads/a-new-chicken-sausage.123843/

Chicken Sausage: Both Smoked & Poached

Thanks, Dan. Some fat from the skins, plus a good amount supplied from both coconut milk and the sesame oil.

Chicken Sausage: Both Smoked & Poached

I’ve found chicken to be easily adaptable in a variety of sausage recipes. Pork and chicken make a great bockwurst if ground veal isn’t available. It is lean so additional fat helps.

Chicken Sausage: Both Smoked & Poached

Here’s something a little different: Thai Chicken Sausage. I’ve made a variety of chicken sausages over the years and discovered a few things in doing so: 1. With any good sausage, you need adequate fat. This is especially true when using poultry as it tends to be quite lean. 2. You cant...

    Easter

The first Easter Sunday in sixteen years that I'll actually be home. Wife is thrilled. We (church staff) recorded all four services (one Good Friday, three Easter) earlier this week to be live-streamed Friday eve (last night) and Sunday morning at our regular service times. We'll have a...

Canadian Bacon For Easter (+ Photos!)

I try to keep wet brining CB to no more than three days. In the past when I'd leave the sectioned loins for 4-5 days, inevitably they came out far too salty and required multiple soakings and rinsing to make them more palatable. IF I'm using a whole (large) loin, I'd more likely go a bit longer...

Canadian Bacon For Easter (+ Photos!)

Pre-Easter Sampling (of course I couldn't wait!): Nice uniform color; firm. Rich smokey flavor with a slight herbal touch. Aromatics certainly gave the bacon an additional complexity. Not too salty (always a concern when brining). Good balance between salty & sweet. Wife even gave it a thumbs...

Canadian Bacon For Easter (+ Photos!)

Its been a while since I had the opportunity to put anything in the smoker, so when pork loin went on sale recently, I put on my R95 mask, maintained a proper social distance and snagged 10lbs — and made plans for some Canadian-style bacon. :emoji_blush: This will not be a QUICK process, mind...

    Grassfed

Benefits of grass-fed beef: It's much leaner than its conventional counterpart which may or may not be desirable from an overall taste perspective. However it is also higher in key nutrients, including antioxidants, vitamins, and a beneficial fat called conjugated linoleic acid (CLA) that's been...

    Weisswurst, Teewurst & Blutwurst

The weisswurst I've made were mild, yet tasty. Think 'bockwurst' with less 'kick' :emoji_laughing: Family prefers the bockwurst so it remains in the wurst rotation. In fact, I'm due to make a new batch of bocks soon!

No Excuse Here Is Your Notice

My wife just reminded me of Valentines and told me not to sweat it ( I love this gal!) and that she ordered a few boxes of See’s candies for family, including a heart-box of chocolates for her. I told her how much I appreciate her. this has been a rough week. My 92-yr old father passed away on...

Super Bowl Sunday - What's on your menu?

Me, too , Chris ,as I am of equal vintage. They played this jingle throughout the 60's and into the 1970s.

Super Bowl Sunday - What's on your menu?

Well, since I work most of Sunday, my Super Bowl menu is going to be something relatively quick-n-easy! I'm thinking shrimp cocktails for starters—maybe a nice cheese & cracker platter—and for the main entree: I've plenty of smokey kielbasa that'll marry well with apple, onions and sauerkraut...
