the pomegranate wood is from a semi-abandoned family pomegranate orchard. All of the trees still produce, but no one will miss a few

I had trouble keeping the temp high enough, even though it was 75 degrees outside, and no wind. I emptied out the water pan and it brought it up to about 200. I kept spraying the ribs to keep them nice and juciy.

I will be smoking 4 racks of spares and 3 racks of babybacks.
I did get a rib rack, but it only holds 5 racks.
So the 4 spares in there, and 3 pinwheel style...
I'll be smoking 2 sets of ribs tomorrow, due to lack of space on the ECB. I want to do the 3-2-1 method.
What do you guys think is the best way, cook both sets of ribs 3-2 and then do the firming up of both at the end?

Has anyone tried Almond or Pomegranate wood for smoking?
I have access to alot of both. The Almond more than Pomegranate, but if pomegranate is really good, i could probably make it happen!
I've been using big chunks of wood scattered on the bottom of the smoker, careful not to touch the heating element.
Does anyone have any suggestions on how to get more smoke? My dad says to use wood chips instead of chunks, but it seems like those would burn up too quick, and I'd have to...
They turned out pretty good. The wife was happy with the fall off the bone tenderness, but I think I like mine a bit tougher. Next time I'll do 1 rack w/o the tin foil.
Also, I used mesquite wood, which was all they had at the local hardware store.
