lol it really is true. Sometimes i find myself trying to think up reasons why i could smoke something. There are just not enough parties going on and honestly getting a smoker for chirstmas sucks. All the holidays are done.
I put them in the smoker with the a-maze-n filled just one row with hickery. It was at 133 after an hour as my plan was to just heavy smoke it for an hour and then put on hot grill for however long it took to get it to 155 or so.

That is actually a good idea. Since im going to pull the point anyways and it needs like 15-20 i can just watch the flat and then once in a while check the point as it doesnt matter near as much.
So my electric ECB is not going to fit the 10lb packer i got the other day. So im going to cut it where the point and the flat meet. Then im thinking of taking the flat to 190 for slices and the point to 205 for pulling. My question is which should could faster? Im guess the point but not 100%...
Also a welding blanket could be your best friend. My electric smoker wont get over 200 or so when it get cold. So i throw on a welding blanket kinda like a suit and then adjust it as needed to keep the temp right. Can get it up to 300 no problem then.
