Welcome Bill, a lot of great info to be had here. I hear that a "stickey" on lots of different mod's may be coming soon. Look for it in the equipment and supplies section perhaps. Glad to have you here!
Welcome WVSmokeMan! My Dad lived many years in WV, working for Union Carbide. I spent many a summer at Summersville Lake camping and smoking meat with him. You have found a great knowledge base here. Enjoy!!
Welcome to the site cajun_1, glad to have you here. My Mom lives in Boise, I've been there once. Seems like a nice place, she loves it. You'll love this site. Let us know about your smokes; before, during, and after. Have fun. Again, welcome!
Dale, welcome. I have yet to smoke in the cold winter months out here in Colorado, so this will be new for me as well. The winters here are not as bad as they are in NH. I was born in Concord, my Dad still lives there. Any way, welcome to the site, enjoy!
xutfuzzy, welcome to the site. As you can see, ask a question and you shall receive! If it's one of Dutch's recipes, you CAN'T go wrong. Let us all know how it goes. Enjoy!!
Hey, VAGuy, glad to meet you! I hope to see some pictures of your rig sometime. Good to hear that you smoked a salmon, that's one of my upcoming smokes. I'd like to see your recipe. Well, welcome!
Welcome aboard Ignatius! You've found a great place to learn and sharpen your skills at the pit. Ask questions, let us know what and when you decide to smoke, and somebody will lend a hand if you need one. What ever you do, enjoy the site! Welcome!
Yup, Dutch, I sure did. Went to the Arizona State game on Saturday and the Cardinals game on Sunday. My friend and I spent Saturday night watching the field crew paint the field for the Card's game. My wife tells me that I have a disease; I just love football, and food!
Welcome John, looks like you are just up the road (I-25) from me. I rub my ribs just like Dutch describes, then 3-2-1 them. Were they Spares or Baby Backs? Spares will be tougher than BB's, it's just the cut. Glad to have you with us, enjoy!
Welcome BigWillie. I spent a lot of school years in CT, East Lyme to be exact (kind of in the New London area). Now Boulder, CO is home. I smoke on a Char-Broil Silver Smoker (off set style), love it. Anyway, good to have you here! Welcome!
Good to have you with us bugz on da barbe! Sounds like we may be headed for a crash course in Smoked Crustaceans. You won't find a better place to learn and share, so enjoy! Welcome!
I'm baaaaaack. What a trip. LOTS of football, college and pro. Watched my Dolphins CHOKE at the end on Thursday night  !! My friend took me out to climb a big hill (2-3 thousand footer?) called Squaw Peek, what a work-out! I got to go see Joel Osteen at The US Airways Center Friday night...
I certainly do not mean to step in the way of the thread on Scott's passing, but just wanted to let you all know that I will be in Phoenix for the next 5 days for opening weekend and I will catch up when I get home. Best wishes to you all...
Hey Kratos, I use a smoker with side fire box as well. My method is a minion build on the charcoal, and one or two wood chunks (depending on size). As I notice the smoke dissipating, I add more chunk. I stop adding wood chunks when the food that I am smoking reaches 140 degrees inside. After 140...
Great looking pork Vman. It's nice to see that if you can't find what you're looking for, you can go with something else (if you've got the guts) and turn out some fine food. Congrats on the smoke!!
