    Correct. I really only need 1 probe for box temp and the pid unit to be wifi, but they dont offer one that way.

    The smaller pieces that broke off while I was cutting we’re smoked as well. They took on a lot of smoke given the small surface area, but not too much smoke for me. I think 1/4” thick pieces would be perfect I will report back in 2 weeks with updated results

    Thanks! I did try two small pieces that broke off. The apple smoke really compliments the flavor of the cheese. It was definitely a great idea! Good to know I can smoke it again if needed. I’m considering smoking more!

    After reading up on elevating the amnps I decided to do it today. I also attached my fan to the 1” hole as it appears above. I am at 10 hours of continuous smoke with 1/3 tray still to go. No microwaving pellets, no burning out, it just works

    Wet aged these chuckies (8lbs) for 3 weeks, smoking them tomorrow. Planning to smoke at 250 till they hit 165 then foil pan lidded to 195. Cube and finish in foil pan till sticky and delicious
