With dry rub cure and EQ curing methods anyone can easily make consistent, excellent bacon. I can't picture ever wanting to do it any other way.
Love to slice it thick for frying and the bacon ends make excellent beans
You can make a lot of fun stuff from the leftover "parts".
I have made quite a bit of braunschweiger, liver sausage, and jaternice from the "specialty cuts"
It just shows what happens when you combine your passion with a vision and perhaps a little luck.
In Joes case, he was able to leverage his skilled trade into a business opportunity.
Too few people are willing to learn skilled trades and get their hand dirty anymore IMHO. It's unfortunate...
Ever notice that consumer grade electric smokers all operate on 120 volts and all of them have small to medium size cabinets?
For large commercial size smokers, you really can't get enough heat output from a 120 volt-20 amp circuit to properly heat a large cabinet with a lot of meat in it...
Congratulations on a great find. Hope you like yours because you will never wear it out or burn it out.
The Brinkman Cimarron smokers turn up from time to time on the second hand market. I have a pair of them.
One is an offset like yours and the other is the grill version which is identical but...
Contact Koch. See if you can get a copy of the specs for that model smoker.

I mentioned regrinding since it is common for many sausage recipes to call for a coarse grind, mix additional ingredients with the meat, and then a second grind through a fine plate.
That Reber grinder looks like a solid unit and is rated for continuous duty. Thats a plus.
Since it is used, is the seller offering any kind of warranty? Are you able to see it operate and confirm all the accessories are there?
Buying used equipment can be an be a great way to get quality at a...
I can believe that grinder could do 5 lbs per minute on the first grind through the coarse plate. The second grind through the fine plate will take 2 to 3 times as long as the first grind.
The slower grind rate on the second grind through the fine plate pretty much applies to most grinders though.
The machine you got sounds like it is very light-duty. I would return it if you can and find something else either manual or a more expensive electric model with a longer duty cycle.
I have had similar experiences with tubed natural casings. I think some of it comes from how long the casings have been in storage on the tube. After a while in storage, they seem to have a tendency to dry out where they are overlapped on the tube and no amount of soaking makes them pliable...
