Just curious how many on here have made the switch from charcoal and if so what were your experiences? What do you like, what don't you like? I'm currently a WSM owner but I'm debating making the switch. I LOVE the flavor that I can get but I am not a fan of the effort needed to setup the smoker...
I hadn't smoked any food in a while so I decided to fire up the smoker. I am experimenting with a turkey breast on the lower rack, I don't expect that to turn out great, but threw on some Ribs for a nice backup plan. This is only the 3rd time that I'll be making spare ribs so hopefully they turn...

i only smoke with briquettes but i do use very little wood with the embers i got. Might give KBB another chance once this stock runs low as its been extra smokey.
Sorry to say this, but they are probably over-smoked on the smoker. i've never had the oven or a crock pot affect the taste. I actually always finish my chuck roasts in a crock pot due to personal preference, but that said, what i've found with my WSM is that a little bit of wood goes along way...
I mean I’m more worried about harm than benefit. For me it’s just what can I prep a day early so that all I have to worry about tomorrow is firing up the smoker and getting the meat in
I know most recipes are based upon wet brining poultry, but since I’m just doing a breast would there be any problem in dry rubbing a turkey breast and keeping it in a ziplock in the fridge overnight?
Big fan of Guru products. my party q has been awesome. I'm honestly debating upgrading though. I got the party q because having batteries vs an extension chord was easier but it doesnt quite have the same power as their other units, which is also why it was likely discontinued.
I have next week off and want to fire up the smoker on Monday to cook up some ribs for the week and get an old turkey breast cooked up. However I can't decide on when to take the turkey breast out of the freezer. would it make more sense to do that today if i want to cook on monday or tomorrow...
This happened with my party q on my ribs. It was just a chunk of wood burning up. Just turned off the guru and fans until the temp dropped 30 degrees and it was fine after that

Update: Got the cylinder locks in the mail today and this thing is now perfect. can't wait to fire this baby up next weekend. (going out of town next week so i think im delaying using it).
Thin blue smoke is ideal. as many others have said learning on a WSM makes it a different beast. I use mine with a party Q and i've found that the embers briquettes I used have quite a bit of smoke to them so i tend to not even use anything heavier than apple with it.
Cant' say they were the cheapest haha but given how bad prices have been here lately they were cheap enough for me to commit. Pork butt around here is still around $2 per lb and these ribs were just under $3. its' crazy.
